Baking

1 tsp baking powder

 1/4 tsp baking soda + 1/2 tsp cream of tartar

1 packet of dry active yeast

 1 tbsp dry yeast or 1 cake of yeast, crumbled

1 cup cake flour

1 cup all-purpose flower sifted, less 2 tbsp 

1/4 cup fine bread crumbs

1/4 cup cracker crumbs or 1 slice of bread, diced, or 2/3 cup quick-cooking oatmeal

1 tbsp cornstarch

2 tbsp flour 

Equivalent of 1 cup self-raising flour

 1 cup all-purpose flour + 1-1/2 tsp baking powder + 1/2 tsp salt

1⁄2 tsp baking powder

1 egg

1 cup pastry flour

1 cup bread flour, less 2 tbsp

1 cup sour cream

1⁄2 cup sour milk + 1/2 cup fat

 

Chocolate

Ingredient

Substitution

1 square unsweetened chocolate

 3 tbsp cacao + 1 tbsp shortening or margarine

1 square semi-sweetened chocolate

 1 square unsweetened chocolate + 1 tbsp sugar

1/2 cup semi-sweetened chocolate chips

3 squares semi-sweetened chocolate


Dairy products/Eggs

1 cup whole milk

1/2 cup evaporated milk + 1/2 cup water, OR 1 cup reconstituted powdered skim milk + 2 tsp butter or oil

1 cup buttermilk or sour milk

 1 tbsp vinegar or lemon juice, + enough milk to make 1 cup, then let sit 5 minutes
1 cup sour cream
1 cup plain yogurt OR 1 cup evaporated milk + 1 tbsp vinegar OR 1 cup cottage cheese put through the blender with 2 tbsp milk and 1 tbsp lemon juice
1 cup half-and-half cream
7/8 cup of milk + 3 tbsp margarine or butter, OR 1 cup evaporated milk
1 cup plain yogurt
1 cup sour milk or 1 cup buttermilk
1 egg (for creams and puddings)
2 egg yolks*
1 egg (for cookies and squares) 2 egg yolks + 1 tbsp water*
1 cup light cream 7/8 cup milk + 3 tbsp butter
1 cup whipped cream 3/4 cup milk + 1/3 cup butter

1 cup light sour cream

2/3 cup sour milk and 1/3 cup fat

* Liquid products sold as egg substitutes may sometimes be used; check equivalences on the package.


Herbs, spices, seasonings, flavourings

1 tsp same herbs, dried, OR 1/4 tsp ground or powdered

1 tsp poultry seasoning

1/4 tsp thyme + 3/4 tsp sage
1 tsp pumpkin pie spices
1/2 tsp cinnamon, 1/2 tsp ginger, 1/8 tsp ground allspice, 1/8 tsp nutmeg
1 clove garlic, chopped fine or pressed
1/8 to 1/4 tsp dried garlic OR 1/8 tsp garlic powder
1 medium onion
2 tbsp dried onion, chopped or chopped fine or in flakes, OR 1-1/2 tsp onion powder
1 medium lemon
2 to 3 tbsp juice (fresh or bottled)
1 medium orange
1/4 to 1/3 cup fresh or frozen and reconstituted orange juice
White wine Equivalent quantity of apple juice or cider

1 cup chicken or beef broth

1 tsp instant broth OR 1 broth cube + 1 cup hot water
1 cup honey 1-1/4 cup sugar + 1/4 cup water


Thickening agents

Vegetables

1 cup canned tomatoes

1-1/3 fresh tomatoes in pieces, simmered for 10 minutes

1 cup tomato sauce

 1 cup canned stewed tomatoes, passed through a blender, OR 1 cup seasoned tomato purée OR 3/4 cup tomato purée + 1/4 cup water
1 cup tomato juice
1 cup tomato sauce + 1/2 cup water
1/2 cup ketchup or chili sauce
1/2 cup tomato sauce + 2 tbsp sugar and 1 tbsp vinegar
1/2 lb fresh mushrooms
4 oz canned mushrooms


Equivalents

1 cup butter

1 cup margarine
1 cup vegetable fat + 1/3 tsp salt
7/8 cup lard + 1/2 tsp salt
 
 1 cup sugar
3/4 cup of brown sugar, well packed, + 1/3 tsp baking soda
1 cup molasses, reduced by one quarter + 1/2 tsp baking soda
1-1/4 cup maple syrup, reduced by half, + 1/4 tsp baking soda
1 cup corn syrup, reduced by one third, + 1/8 tsp baking soda
 

Miscellaneous
