Turkey Breast with Sun-Dried Tomato Pesto

Ingredients

  1. 1 large turkey breast (4-6 oz) 
  2. salt & pepper 
  3. 1-1/2 cups sun-dried tomatoes 
  4. 4 cloves garlic, diced 
  5. 1 sprig fresh thyme, 
finely chopped 
  6. 1/2 sprig fresh rosemary, 
finely chopped 
  7. 1/4 cup olive oil 
  8. 1/4 cup grape seed oil 
pinch chili flakes 
  9. 1/4 tsp kosher salt 
  10. 1/4 tsp black pepper

Steps

  1. Preheat oven to 375°F.
  2. Season turkey breast with salt and pepper; set aside.
  3. Add sun-dried tomatoes, garlic, thyme and rosemary in food processor; pulse first and add oils a bit at a time until it resembles a coarse pesto paste.
  4. Add chili flakes and season with kosher salt and black pepper.
  5. Cover the turkey breast with pesto paste.
  6. Place in shallow baking pan, cover and bake for 25-35 minutes until completely cooked.
  7. Turn down heat, if necessary, to avoid drying out the meat.
