Ingredients
- 1 large turkey breast (4-6 oz)
- salt & pepper
- 1-1/2 cups sun-dried tomatoes
- 4 cloves garlic, diced
- 1 sprig fresh thyme, finely chopped
- 1/2 sprig fresh rosemary, finely chopped
- 1/4 cup olive oil
- 1/4 cup grape seed oil pinch chili flakes
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
Steps
- Preheat oven to 375°F.
- Season turkey breast with salt and pepper; set aside.
- Add sun-dried tomatoes, garlic, thyme and rosemary in food processor; pulse first and add oils a bit at a time until it resembles a coarse pesto paste.
- Add chili flakes and season with kosher salt and black pepper.
- Cover the turkey breast with pesto paste.
- Place in shallow baking pan, cover and bake for 25-35 minutes until completely cooked.
- Turn down heat, if necessary, to avoid drying out the meat.
