Tuna, Olive and Red Pepper Fusilli

Ingredients

  1. 3 tbsp (15 mL) extra-virgin olive oil 
  2. 1onion, sliced 
  3. 4 cloves garlic, minced 
  4. 1 red pepper, thinly sliced 
  5. 1/2 tsp (1 mL) each salt, oregano and hot pepper flakes 
  6. 2 cans tuna, drained 
  7. 5 cups fusilli 
  8. 3 tbsp chopped fresh parsley

Steps

  1. Heat 2 tbsp of oil in skillet and cook onion, garlic, red pepper, salt, oregano and hot pepper flakes, for about 5 minutes. Add remaining oil and tuna, breaking into chunks, and cook for another 5 minutes.
  2. In the meantime, cook pasta until desired doneness. Drain and return to pot.
  3. Add parsley and contents of skillet to pasta pot and toss to coat.
