I stumbled upon this recipe by chance, and the result was fabulous. That is why I want to share this dish which is a pure pleasure for the palate!
Tofu Casserole with Herbs

Ingredients
- 2 onions, coarsely chopped
- 1 zucchini, cut into cubes
- 3 tbsp (45 ml) olive oil
- 350 g (3/4 lbs) of natural firm tofu, cut into cubes
- 1 tomato, cut into cubes
- 1/2 tsp (2g) oregano
- 1/4 tsp (1 g) thyme
- 1 pinch (1 g) garlic powder
- Pepper to taste
- 1/2 cup (125 ml) of vegetable broth (optional)
- 3 tbsp (45 ml) of tamari soy sauce (to taste)
Steps
- In a large saucepan, fry the onions, zucchini, oregano and thyme in olive oil for about 5 minutes.
- Add the tofu, tomatoes, garlic powder and pepper and continue cooking for a few minutes.
- Add the chicken stock and tamari sauce and simmer for 5 minutes over low heat. Serve.
