Tofu Casserole with Herbs

I stumbled upon this recipe by chance, and the result was fabulous. That is why I want to share this dish which is a pure pleasure for the palate!

Ingredients

  1. 2 onions, coarsely chopped 
  2. 1 zucchini, cut into cubes 
  3. 3 tbsp (45 ml) olive oil 
  4. 350 g (3/4 lbs) of natural firm tofu, cut into cubes 
  5. 1 tomato, cut into cubes 
  6. 1/2 tsp (2g) oregano 
  7. 1/4 tsp (1 g) thyme 
  8. 1 pinch (1 g) garlic powder 
  9. Pepper to taste 
  10. 1/2 cup (125 ml) of vegetable broth (optional) 
  11. 3 tbsp (45 ml) of tamari soy sauce (to taste)

Steps

  1. In a large saucepan, fry the onions, zucchini, oregano and thyme in olive oil for about 5 minutes.
  2. Add the tofu, tomatoes, garlic powder and pepper and continue cooking for a few minutes.
  3. Add the chicken stock and tamari sauce and simmer for 5 minutes over low heat. Serve.
