Ingredients

  1. 1 turkey (about 10 to 12 lbs) 
  2. 1/2 to 1 tsp spices poultry 
  3. Salt and pepper to taste 
  4. 1 cup chicken broth 
  5. 2 carrots, chopped 
  6. 2 celery stalks, chopped 
  7. 1 large onion cut in half

Steps

  1. Combine poultry spice with salt and pepper. Put in the cavity of the turkey. Add the onion halves and carrots and celery. Place the turkey in the dripping pan.
  2. Brush with chicken broth.
  3. Bake in 350°F oven for 30 minutes then reduce the temperature to 300°F. Cook slowly and surely. Baste every 30 minutes.
  4. Cook the turkey to belly/breast side down so the meat is less dry. Cover. One hour before the end of cooking time, turn the turkey so it is again roasting on its back.
  5. Also, one hour before end of cooking time, uncover the turkey. This ill give it a golden appearance.
  6. Don't forget to baste every 30 minutes.
  7. Serve with vegetables of your choice and your favorite gravy.
