Savory Pork Roast

Ingredients

  1. 1 pork loin 3 to 5 lb (1.2 - 2 kg)  
  2. 2 cloves garlic  
  3. 1 tsp (5 g) savory 
  4. 1 tsp (5 g) dry mustard  
  5. 1/2 tsp (2 g) sage  
  6. Salt and pepper  
  7. 1 to 2 cups (250 mL to 500 mL) water  
  8. Carrots (optional) 
  9. Leeks (optional)  
  10. Potatoes (optional)

Steps

  1. Cut 2 slits in the pork and insert the garlic cloves.
  2. Place the roast in an ovenproof dish. Rub the roast with a mixture of savory, dry mustard and sage. Add salt and pepper. Cook in the oven at 325 F for 1 hour.
  3. Add the vegetables and water and continue cooking for 2 hours, turning the potatoes during the second hour and basting the roast often.
