Ingredients
- 1 pork loin 3 to 5 lb (1.2 - 2 kg)
- 2 cloves garlic
- 1 tsp (5 g) savory
- 1 tsp (5 g) dry mustard
- 1/2 tsp (2 g) sage
- Salt and pepper
- 1 to 2 cups (250 mL to 500 mL) water
- Carrots (optional)
- Leeks (optional)
- Potatoes (optional)
Steps
- Cut 2 slits in the pork and insert the garlic cloves.
- Place the roast in an ovenproof dish. Rub the roast with a mixture of savory, dry mustard and sage. Add salt and pepper. Cook in the oven at 325 F for 1 hour.
- Add the vegetables and water and continue cooking for 2 hours, turning the potatoes during the second hour and basting the roast often.
