Pumpkin Cookies

Ingredients

  1. 1/2 cup (125 mL) butter, melted 
  2. 1-1/4 cup (250 g) brown sugar 
  3. 2 eggs 
  4. 1 tsp (5 mL) vanilla 
  5. 1-1/2 cups (375 mL) shredded pumpkin 
  6. 2-1/2 cups (300 g) all-purpose flour 
  7. 4 tsp (20 g) baking powder 
  8. 1/2 tsp (3 g) cinnamon 
  9. 1 cup (250 mL) raisins 
  10. 1 cup (250 mL) peanuts, crumbled 
  11. Walnuts, optional

Steps

  1. Preheat the oven to 375°F (190°C).
  2. Combine the butter and brown sugar, then add the eggs. Stir well, then add the vanilla and pumpkin. Stir gently, then set aside.
  3. Combine the dry ingredients (flour, baking powder, cinnamon). Add to the pumpkin mixture and mix well.
  4. Add the peanuts and walnuts. Stir.
  5. Drop by the spoonful onto a greased cookie sheet. Bake for 10 to 15 minutes.
  6. Makes about 20 cookies.
