Ingredients
- 1/2 cup (125 mL) butter, melted
- 1-1/4 cup (250 g) brown sugar
- 2 eggs
- 1 tsp (5 mL) vanilla
- 1-1/2 cups (375 mL) shredded pumpkin
- 2-1/2 cups (300 g) all-purpose flour
- 4 tsp (20 g) baking powder
- 1/2 tsp (3 g) cinnamon
- 1 cup (250 mL) raisins
- 1 cup (250 mL) peanuts, crumbled
- Walnuts, optional
Steps
- Preheat the oven to 375°F (190°C).
- Combine the butter and brown sugar, then add the eggs. Stir well, then add the vanilla and pumpkin. Stir gently, then set aside.
- Combine the dry ingredients (flour, baking powder, cinnamon). Add to the pumpkin mixture and mix well.
- Add the peanuts and walnuts. Stir.
- Drop by the spoonful onto a greased cookie sheet. Bake for 10 to 15 minutes.
- Makes about 20 cookies.
