Very good served with fresh pasta. It compliments the sauce.
Ingredients
- 1/2 cup (75 g) bread crumbs
- 1/4 cup (40 g) freshly grated Parmesan cheese
- 4 veal scallops
- 2 eggs
- Vegetable oil, for cooking
- 1 cup (250 mL) tomato sauce
- Mixed Italian spices, to taste (basil, oregano, etc.)
- 1 clove garlic, chopped
- 4 slices mozzarella cheese
Steps
- Preheat the oven to 350 F (180 C).
- In a small bowl, beat the eggs. Set aside.
- In another small bowl, combine the bread crumbs and Parmesan.
- Flatten the scallops. Dip them in the beaten eggs and then in the bread crumb-Parmesan mixture.
- In a medium saucepan, lightly heat the oil. Brown the scallops on both sides.
- Pour a small amount of tomato sauce in an ovenproof dish. Arrange scallops on top.
- Sprinkle with seasonings. Cover with mozzarella. Pour on remaining sauce.
- Cook for 20 to 30 minutes at 350 F (180 C).
