Parmesan Veal Scallops

Very good served with fresh pasta. It compliments the sauce.

Ingredients

  1. 1/2 cup (75 g) bread crumbs 
  2. 1/4 cup (40 g) freshly grated Parmesan cheese 
  3. 4 veal scallops 
  4. 2 eggs 
  5. Vegetable oil, for cooking 
  6. 1 cup (250 mL) tomato sauce 
  7. Mixed Italian spices, to taste (basil, oregano, etc.) 
  8. 1 clove garlic, chopped 
  9. 4 slices mozzarella cheese

Steps

  1. Preheat the oven to 350 F (180 C).
  2. In a small bowl, beat the eggs. Set aside.
  3. In another small bowl, combine the bread crumbs and Parmesan.
  4. Flatten the scallops. Dip them in the beaten eggs and then in the bread crumb-Parmesan mixture.
  5. In a medium saucepan, lightly heat the oil. Brown the scallops on both sides.
  6. Pour a small amount of tomato sauce in an ovenproof dish. Arrange scallops on top.
  7. Sprinkle with seasonings. Cover with mozzarella. Pour on remaining sauce.
  8. Cook for 20 to 30 minutes at 350 F (180 C).
