Mocha Chocolate Chip Scones

We have been baking and serving these for years now and our customers love them.

Ingredients

  1. 2 cups organic flour (a blend of unbleached organic white flour with a natural 6-grains blend) 
  2. 1/3 cup organic fair trade cocoa (sift to remove lumps) 
  3. 3 tbsp organic fair trade sugar 
  4. 4 tsp baking powder 
  5. 1/2 tsp salt 
  6. 1/3 cup organic canola oil 
  7. 3/4 cup organic milk 
  8. 1 double shot of Bean North Espresso, cooled 
  9. 1/2 cup organic fair trade chocolate chips

Steps

  1. Mix flour, cocoa, sugar, baking powder, salt and chocolate chips. Set aside.
  2. Mix oil, milk and espresso.
  3. Pour oil mixture into the flour mixture and stir well.
  4. Scoop the batter into individual piles on the baking sheet. (Use the 1/3 measuring cup as it is already oiled and is a decent amount).
  5. Press the dough down until it is about 1/2 inch thick. Sprinkle the top with sugar and cocoa.
  6. Put into a 400°F oven and bake for 10 minutes. The top should feel firm when pressed.
  7. Cool completely and enjoy.
  8. Optional: At the right time of year we usually add local Yukon low bush cranberries that we pick ourselves, they are an extra special treat!
