We have been baking and serving these for years now and our customers love them.
Ingredients
- 2 cups organic flour (a blend of unbleached organic white flour with a natural 6-grains blend)
- 1/3 cup organic fair trade cocoa (sift to remove lumps)
- 3 tbsp organic fair trade sugar
- 4 tsp baking powder
- 1/2 tsp salt
- 1/3 cup organic canola oil
- 3/4 cup organic milk
- 1 double shot of Bean North Espresso, cooled
- 1/2 cup organic fair trade chocolate chips
Steps
- Mix flour, cocoa, sugar, baking powder, salt and chocolate chips. Set aside.
- Mix oil, milk and espresso.
- Pour oil mixture into the flour mixture and stir well.
- Scoop the batter into individual piles on the baking sheet. (Use the 1/3 measuring cup as it is already oiled and is a decent amount).
- Press the dough down until it is about 1/2 inch thick. Sprinkle the top with sugar and cocoa.
- Put into a 400°F oven and bake for 10 minutes. The top should feel firm when pressed.
- Cool completely and enjoy.
- Optional: At the right time of year we usually add local Yukon low bush cranberries that we pick ourselves, they are an extra special treat!
