Minced Pork Pita Pockets

Ingredients

  1. 1 green pepper, diced 
  2. 1 lb (450 g) lean minced pork 
  3. 1/2 cup (125 g) chopped pepperoni 
  4. 2 fresh tomatoes, seeded and cubed 
  5. Salt and freshly ground pepper, to taste 
  6. Dried Italian herbs, to taste 
  7. 1 cup (100 g) mozzarella, grated 
  8. 4 small whole wheat pitas

Steps

  1. Cook the pepper, pork and pepperoni for 6 to 7 minutes in a nonstick frying pan on medium heat.
  2. Add the tomatoes and cook for 1 minute, stirring. Season to taste.
  3. Cut off a 1 cm (1/2 inch) strip from the top of each pita and open, taking care not to tear. Spread the cheese and meat into the pockets. Prick with a toothpick to close well.
