Ingredients
- 1 green pepper, diced
- 1 lb (450 g) lean minced pork
- 1/2 cup (125 g) chopped pepperoni
- 2 fresh tomatoes, seeded and cubed
- Salt and freshly ground pepper, to taste
- Dried Italian herbs, to taste
- 1 cup (100 g) mozzarella, grated
- 4 small whole wheat pitas
Steps
- Cook the pepper, pork and pepperoni for 6 to 7 minutes in a nonstick frying pan on medium heat.
- Add the tomatoes and cook for 1 minute, stirring. Season to taste.
- Cut off a 1 cm (1/2 inch) strip from the top of each pita and open, taking care not to tear. Spread the cheese and meat into the pockets. Prick with a toothpick to close well.
