Merguez Sausages with Mayonnaise Sauce

Merguez sausages are of North African origin and are typically made from either lamb or beef.

Ingredients

  1. 12 merguez sausages 
  2. 1 cup of mayonnaise 
  3. 1 onion, minced 
  4. 1 tomato, cut in pieces 
  5. 1 tbsp capers, drained 
  6. 2 tbsp extra-virgin olive oil 
  7. Salt and pepper, to taste 

Steps

  1. Heat the oil in a skillet at medium heat and brown the onions for 2-3 minutes. Set onions aside.
  2. Cook sausages in skillet  for about 20 minutes, turning them regularly.
  3. Add the onions and the capers 3 minutes before the end of the cooking.
  4. Mix the oil, onions, tomatoes and capers in a bowl with the mayonnaise. Salt and pepper, to your taste. Serve with the sausages.
  5. ***I serve the sausages with parmesan pasta and a balsamic salad. Yummy!
