Mediterranean Pizza for Saturday Lunch

Ingredients

  1. 4 tortillas 
  2. 1 can (213 mL) pizza sauce 
  3. 4 mushrooms, in pieces 
  4. 1/4 red pepper, in strips 
  5. 4 clove garlic, minced 
  6. Some Kalamata olives, sliced 
  7. Some sundried tomatoes, cut into small pieces 
  8. 4 spears asparagus, cut into pieces 
  9. 4 leeks, chopped 
  10. Herbs, to taste 
  11. Seasoned olive oil 
  12. Mozzarella cheese, and other cheese, to taste (goat, cheddar, etc.)

Steps

  1. Lay out the 4 tortillas on cookie sheets and cover with pizza sauce.
  2. Spread the mushrooms, peppers, garlic, olives, tomatoes, asparagus and leeks.
  3. Sprinkle with herbs and a dash of oil.
  4. Add the cheeses.
  5. Bake at 350 F (180 C) for 10 to 13 minutes.
