Maple Syrup Salmon

Think about accompanying your skewers with a tomato tart -- your guests will love it.

Ingredients

  1. 1 kg salmon fillets 
  2.  
  3. Marinade: 
  4. 3/4 cup maple syrup 
  5. 1 tbsp Dijon mustard 
  6. 1 tsp capers 
  7. 1 tbsp lime or lemon juice 
  8.  
  9. Dip: 
  10. 150 ml sour cream 
  11. 3 tbsp maple syrup 
  12. 1 tbsp capers 
  13. 1 tbsp lime or lemon juice 
  14. Salt and pepper

Steps

  1. Cut the salmon fillet into cubes.
  2. Mix together the marinade ingredients and place the cubes of salmon into the mix. Let marinate for 15 minutes.
  3. Meanwhile, in another bowl, mix together the ingredients for the dipping sauce and set aside.
  4. Thread the salmon cubes onto 2 bamboo skewers because it simplifies the grilling of salmon. (But you could grill the fillets whole if you like). Grill for about 4 to 5 minutes each side on the barbecue.
