Maple Syrup Salmon

Ingredients
- 1 kg salmon fillets
- Marinade:
- 3/4 cup maple syrup
- 1 tbsp Dijon mustard
- 1 tsp capers
- 1 tbsp lime or lemon juice
- Dip:
- 150 ml sour cream
- 3 tbsp maple syrup
- 1 tbsp capers
- 1 tbsp lime or lemon juice
- Salt and pepper
Steps
- Cut the salmon fillet into cubes.
- Mix together the marinade ingredients and place the cubes of salmon into the mix. Let marinate for 15 minutes.
- Meanwhile, in another bowl, mix together the ingredients for the dipping sauce and set aside.
- Thread the salmon cubes onto 2 bamboo skewers because it simplifies the grilling of salmon. (But you could grill the fillets whole if you like). Grill for about 4 to 5 minutes each side on the barbecue.
