Ingredients
- 2 ripe avocados
- 2 apples
- 1 tbsp (15 ml) Dijon mustard
- 4 tbsp (60 mL) maple syrup
- 2 tbsp (30 ml) olive oil
- 1 tsp (5 ml) lemon juice
- 1 tsp (5 ml) lime juice
- 1 tsp (5 ml) apple cider vinegar
- Parsley, to taste
Steps
- Cut avocados in half. Remove pits. Carefully scoop out flesh from each in one large piece. Keep the halved skins intact for the presentation.
- Cut the avocado flesh into thin slices and place in a bowl. Pour lime juice and lemon juice over slices to prevent blackening.
- Cut apples into thin slices. Add to the avocado mixture.
- Add remaining ingredients, except parsley, to bowl. Mix.
- Fill the reserved avocado halves with this mixture.
- Serve on a plate, sprinkled with parsley.
