Maple Avocado Stuffed with Apples

Ingredients

  1. 2 ripe avocados 
  2. 2 apples 
  3. 1 tbsp (15 ml) Dijon mustard 
  4. 4 tbsp (60 mL) maple syrup 
  5. 2 tbsp (30 ml) olive oil 
  6. 1 tsp (5 ml) lemon juice 
  7. 1 tsp (5 ml) lime juice 
  8. 1 tsp (5 ml) apple cider vinegar 
  9. Parsley, to taste

Steps

  1. Cut avocados in half. Remove pits. Carefully scoop out flesh from each in one large piece. Keep the halved skins intact for the presentation.
  2. Cut the avocado flesh into thin slices and place in a bowl. Pour lime juice and lemon juice over slices to prevent blackening.
  3. Cut apples into thin slices. Add to the avocado mixture.
  4. Add remaining ingredients, except parsley, to bowl. Mix.
  5. Fill the reserved avocado halves with this mixture.
  6. Serve on a plate, sprinkled with parsley.
