Ingredients
- 1 green pepper, diced
- 1 lb (450 g) lean ground pork
- 1/2 cup (125 g) ground pepperoni
- 2 fresh tomatoes, seeded and cubed
- Salt and pepper, freshly ground, to taste
- Dried Italian herbs, to taste
- 1 cup (100 g) mozzarella cheese, grated
- 4 small whole wheat pita breads
Steps
- Sauté the pepper, pork and pepperoni for 6 or 7 minutes in a non-stick frying pan over medium heat.
- Add the tomatoes and stir for 1 minute. Season to taste.
- Cut a 1 cm (1/2-inch) wide strip from the end of a pita and open it carefully so that it does not tear. Fill the pita with cheese and the meat mix. Close the pitas securely with toothpicks.
- Place the pitas in the oven and broil for 2 to 3 minutes before serving.
