Ground Pork Pita Pockets

Ingredients

  1. 1 green pepper, diced 
  2. 1 lb (450 g) lean ground pork  
  3. 1/2 cup (125 g) ground pepperoni  
  4. 2 fresh tomatoes, seeded and cubed  
  5. Salt and pepper, freshly ground, to taste 
  6. Dried Italian herbs, to taste 
  7. 1 cup (100 g) mozzarella cheese, grated  
  8. 4 small whole wheat pita breads

Steps

  1. Sauté the pepper, pork and pepperoni for 6 or 7 minutes in a non-stick frying pan over medium heat.
  2. Add the tomatoes and stir for 1 minute. Season to taste.
  3. Cut a 1 cm (1/2-inch) wide strip from the end of a pita and open it carefully so that it does not tear. Fill the pita with cheese and the meat mix. Close the pitas securely with toothpicks.
  4. Place the pitas in the oven and broil for 2 to 3 minutes before serving.
