Ingredients
- half green pepper
- half red pepper
- half yellow pepper
- half orange pepper
- one zucchini
- one large red onion
- button mushrooms
- garlic
- ** VARY AMOUNTS OF VEGETABLES ACCORDING TO PERSONAL TASTE AND/OR WHATEVER YOU MIGHT HAVE IN YOUR FRIDGE
- raspberry vinegarette dressing
Steps
- Wash all vegetables. Chop peppers into bite-size pieces. Slice zucchini into coin-shape pieces. Chop onion into 8 pieces. Quarter mushrooms. Slice garlic into 2-3 pieces.
- Place vegetables in a container and cover with raspberry vinegarette dressing. Refrigerate for 24 hours. Shake container occassionally to coat vegetables.
- Saute in frying pan (stir occassionally) until desired tenderness of vegetables is reached; OR place in a grilling basket and place on BBQ (shaking occasionally) over medium heat until desired tenderness is reached.
