Grilled Cheese French Toast

If you think mustard is only good on hot dogs, you're in for a delicious surprise when you combine it with the mellow flavour of cheese.

Ingredients

  1. 4 slices bread 
  2. 1 tbsp (15 mL) Dijon mustard 
  3. 4 slices cheddar or Swiss cheese 
  4. 2 eggs 
  5. 1/4 cup (50 mL) milk  
  6. Pinch each salt and pepper 
  7. 2 tsp (10 mL) butter 
  8. 1 tsp (5 mL) vegetable oil

Steps

  1. Lay bread slices on counter. Divide mustard equally among slices; spread evenly with knife. Place 2 slices of cheese on 2 of the bread slices; cover with remaining slices of bread, mustard-side down. Press together lightly.
  2. Break eggs into bowl; whisk until yolk and white are blended. Whisk in milk, salt and pepper.
  3. Lay 1 sandwich in egg mixture. Using both lifters, one under and one on top, turn sandwich to soak both sides. Place on sheet of waxed paper. Repeat with second sandwich, letting it soak up all the remaining egg mixture.
  4. Place skillet over medium heat; add butter and oil, swirling to coat surface. Lay sandwiches in skillet; cook for about 3 minutes or until golden brown underneath.
  5. Using both lifters, one under and one on top, turn each sandwich. Cook for about 3 minutes longer or until golden brown underneath and cheese is melted and oozy.
