I prepare my pancake batter ahead of time and refrigerate it overnight. If you want to use it immediately, reduce the amount of milk to 1 cup.

Ingredients

  1. 1 cup flour 
  2. 1 tbsp sugar 
  3. 1 pinch salt 
  4. 2 eggs, beaten 
  5. 1-1/4 cups milk 
  6. 1 tbsp softened butter

Steps

  1. In a bowl, mix together flour, sugar and salt.
  2. Add the beaten eggs, milk and butter.
  3. Mix well to obtain a smooth consistency and refrigerate overnight.
  4. Put some butter in a skillet heated to medium heat and pour in batter (sized to your liking). When batter bubbles (about 30 seconds) flip pancake and cook other side for about the same amount of time (30 seconds).
  5. Serve with butter or maple syrup or both, depending on your tastes.
