Fettuccine Alfredo with Chicken

Ingredients

  1. 1 tbsp (15 mL) olive oil 
  2. 1/4 cup (30 mL) butter  
  3. 1 tsp (5 mL) flour 
  4. 380 mL (12 oz) evaporated milk (can be replaced with cream)  
  5. 3/4 cup (180 mL) Parmesan cheese, grated  
  6. 1 tsp (5 mL) parsley, chopped  
  7. 1-1/2 cups (375 mL) chicken, in strips  
  8. 1/2 cup (125 mL) cooked bacon, crumbled  
  9. 4 cups (1 L) fettuccine  
  10. Pepper to taste

Steps

  1. Cook the fettuccine in boiling water and set aside.
  2. In a skillet, cook the chicken and set aside.
  3. In a skillet, melt the butter and add the flour. Cook for a few minutes.
  4. Pour in the milk (or cream) and stir using a whisk.
  5. Add the cheese and parsley.
  6. Add the chicken and bacon. Pepper and let cook a few more minutes.
  7. Add the fettuccine and serve!
