Creamy Chicken with Sundried Tomatoes

Serve this creamy chicken over rice or pasta.

Ingredients

  1. 4 boneless, skinless chicken breasts, cut into thin strips 
  2. 3 tbsp (45 ml) olive oil 
  3. 3 shallots, minced 
  4. 2/3 cup (170 ml) 15% cream 
  5. 1/2 cup (125 ml) dry white wine 
  6. 2 tbsp (30 ml) marjoram 
  7. 1/4 cup (65 ml) sundried tomatoes, coarsely chopped

Steps

  1. Heat oil in a skillet. Add chicken strips and cook for 4 to 5 minutes. Remove chicken from skillet and set aside.
  2. Add the shallots. Cook for 1 minute.
  3. Add wine, cream, marjoram and sundried tomatoes. Bring to a boil and cook uncovered until sauce thickens, about 5 minutes.
  4. Add chicken to sauce. Reheat for 2 to 3 minutes.
