Cream of Broccoli or Cauliflower Soup

Serve with bread or a few croutons!

Ingredients

  1. 1 broccoli or cauliflower 
  2. 2 potatoes 
  3. 2 carrots 
  4. 2 or 3 stalks celery 
  5. 1 large onion 
  6. 4 cups (1 L) chicken broth 
  7. Salt and pepper, to taste 
  8. 1/4 cup (65 mL) milk or cream

Steps

  1. Cut up the vegetables.
  2. Cook all the ingredients, except the milk, until the vegetables are tender.
  3. Pour the cooked vegetables into a blender with the milk, reheat and serve.
