Ingredients
- 2 cups milk
- 1/2 cup sugar
- 1/4 cup flour
- 1/2 tsp salt
- 3 egg yolks
- 2 tablespoons butter
- 2 tsp vanilla
- 1 cup coconut
- 1 baked pie crust (9-inch) or graham cookie crust
- Whipped cream and roasted coconut for topping
Steps
- Boil 1-1/2 cups of milk. Remove from heat. In food processor (or blender), place remaining 1/2 cup of cold milk, sugar, flour and salt and blend. Add hot milk gradually to the blender until mixture is very smooth.
- Pour mixture into a pot and bring to a boil quickly. Remove from heat.
- Put egg yolks into the blender and mix until pale; gradually add the milk mixture and mix until smooth.
- Return mixture to saucepan and cook over low heat for 3 minutes, stirring constantly.
- Remove from heat and add butter, vanilla and coconut. Stir until butter is melted. Allow to cool and pour into baked crust.
- Once the pie has cooled well, garnish with whipped cream and toasted coconut.
- Note: This pie is also excellent with a meringue. Once the pie has cooled well, it is covered with meringue and then baked in the oven until golden on top.
