Tender morsels bursting with sunny citrus flavours and brightened with paprika light up any party. If you like, thread the chicken onto small skewers to broil instead of serving them with toothpicks.
Ingredients
- 1 tsp (5 mL) grated lime rind
- 2 tbsp (25 mL) lime juice
- 1/2 tsp (2 mL) grated orange rind
- 1 tbsp (15 mL) orange juice
- 2 tsp (10 mL) packed brown sugar
- 1 tsp (5 mL) each paprika and chili powder
- Pinch salt
- 1 lb (500 g) boneless skinless chicken breasts
Steps
- In bowl, whisk together lime rind and juice, orange rind and juice, sugar, paprika, chili powder and salt.
- Cut chicken into 1-inch (2.5 cm) cubes; add to bowl and toss to coat. Place on foil-lined baking sheet. Broil for about 5 minutes or until no longer pink inside.
