Chickpeas and Rice

Ingredients

  1. 1 tbsp (15 mL) olive oil 
  2. 1 onion, finely chopped 
  3. 1 clove garlic, peeled, crushed and chopped 
  4. 1/2 stalk celery, diced 
  5. 1 green pepper, diced 
  6. 3 tomatoes, peeled and diced 
  7. 1/2 tsp (2 mL) basil 
  8. 1/4 tsp (1 mL) thyme 
  9. 1 tbsp (15 mL) fresh parsley, chopped 
  10. 1 can (19 oz; 540 mL) chickpeas, drained 
  11. 4 servings cooked rice 
  12. Salt and pepper

Steps

  1. Heat the oil in a sauté pan over medium heat. Add the onion, garlic and celery. Cook for 5 minutes over low heat.
  2. Add the green pepper, tomatoes and herbs. Add salt and pepper, to taste, and cook over medium heat for 12 minutes.
  3. Add the chickpeas and let simmer for 4 minutes.
  4. Serve with rice.
