Ingredients
- 1 tbsp (15 mL) olive oil
- 1 onion, finely chopped
- 1 clove garlic, peeled, crushed and chopped
- 1/2 stalk celery, diced
- 1 green pepper, diced
- 3 tomatoes, peeled and diced
- 1/2 tsp (2 mL) basil
- 1/4 tsp (1 mL) thyme
- 1 tbsp (15 mL) fresh parsley, chopped
- 1 can (19 oz; 540 mL) chickpeas, drained
- 4 servings cooked rice
- Salt and pepper
Steps
- Heat the oil in a sauté pan over medium heat. Add the onion, garlic and celery. Cook for 5 minutes over low heat.
- Add the green pepper, tomatoes and herbs. Add salt and pepper, to taste, and cook over medium heat for 12 minutes.
- Add the chickpeas and let simmer for 4 minutes.
- Serve with rice.
