Chicken Salad with Apple and Broccoli

The apple adds a touch of sweetness. Ideal if you want to eat a light meal or add more vegetables to your diet.

Ingredients

  1. 1 cup (250 mL) cooked chicken, cut up 
  2. 1/2 cup (125 mL) broccoli, cooked, in florets 
  3. 1/4 cup (65 mL) celery, diced 
  4. 1 green onion, sliced 
  5. 1 tbsp (15 mL) mayonnaise 
  6. 1 apple, cubed

Steps

  1. Cut the broccoli into florets and cook for 5 minutes in boiling water.
  2. Meanwhile, cut up the chicken. Place in a large mixing bowl.
  3. Dice the celery. Place it in the bowl with the chicken.
  4. Next, cube the apple and add it to the chicken.
  5. Finally, slice the green onion and add it to the bowl. Combine all with the mayonnaise.
  6. When the broccoli is cooked, drain well and add it to the bowl. Mix gently.
  7. Serve hot or cold.
