Chicken and Vegetable Rice

Ingredients

  1. 2 cups (420 g) long grain rice 
  2. 3-1/2 cups (875 mL) water 
  3. 1/4 cup (65 mL) soy sauce 
  4. 1/2 cup (125 mL) canola oil 
  5. 1 package (50 g) onion soup mix 
  6. 1 onion, diced 
  7. 3 stalks celery, sliced on an angle 
  8. 1 red pepper, diced 
  9. 1 basket (225 g) white mushrooms, fresh, sliced 
  10. 2 cups (200 g) cooked chicken, diced 
  11. 1 pinch (1 g) salt

Steps

  1. In a large, ovenproof dish (10 cups; 2.5-litre capacity), add the ingredients in order and mix well.
  2. Place in the oven at 350 F (180 C) for about 1 hour and 15 minutes, uncovered.
  3. Stir at least three times during cooking.
  4. The rice is ready when the liquid is absorbed.
