Chicken and Vegetable Fusilli with Garlic

Ingredients
- 2 boneless, skinless chicken breasts (cut in strips)
- 6 cloves garlic, chopped
- 2 tsp (10 ml) canola oil
- 2 tbsp (30 ml) lemon juice
- 1 pinch oregano
- 1 sweet red pepper, julienned
- 1 onion, diced
- 1/2 cup (125 ml) broccoli florets
- 1 cup (250 mL) fusilli pasta
- Parmesan cheese to taste
Steps
- Heat canola oil in a frying pan. Add chicken strips, garlic, oregano and lemon juice. Brown for 1 to 2 minutes.
- Add vegetables and continue cooking until chicken is cooked through. Set aside.
- Cook the fusilli according to the usual method. Drain well.
- Add pasta to skillet with chicken and vegetables and stir-fry for 1 to 2 minutes. Remove from heat.
- Grate Parmesan cheese to taste and add to pasta. Allow to melt. Serve immediately.
