Chicken and Vegetable Fusilli with Garlic

This is a great way to use up any extra vegetables sitting in your refrigerator.

Ingredients

  1. 2 boneless, skinless chicken breasts (cut in strips) 
  2. 6 cloves garlic, chopped 
  3. 2 tsp (10 ml) canola oil 
  4. 2 tbsp (30 ml) lemon juice 
  5. 1 pinch oregano 
  6. 1 sweet red pepper, julienned 
  7. 1 onion, diced 
  8. 1/2 cup (125 ml) broccoli florets 
  9. 1 cup (250 mL) fusilli pasta 
  10. Parmesan cheese to taste

Steps

  1. Heat canola oil in a frying pan. Add chicken strips, garlic, oregano and lemon juice. Brown for 1 to 2 minutes.
  2. Add vegetables and continue cooking until chicken is cooked through. Set aside.
  3. Cook the fusilli according to the usual method. Drain well.
  4. Add pasta to skillet with chicken and vegetables and stir-fry for 1 to 2 minutes. Remove from heat.
  5. Grate Parmesan cheese to taste and add to pasta. Allow to melt. Serve immediately.
