When I make this recipe, I double it, it's so good. The rice makes it a creamy soup.
Ingredients
- 1 medium onion, sliced
- 1 clove garlic
- 5 cups (1.2 L) water
- 2 1/2 cups (625 mL) carrots, sliced
- 1/4 cup (65 mL) rice, uncooked
- 2 tbsp (30 mL) chicken broth
- Salt and pepper, to taste
Steps
- Brown the onions and garlic in a saucepan with a bit of oil.
- Add the water, carrots, rice and broth and bring to a boil.
- Cover and let simmer for 20 to 25 minutes.
- Process in a blender.
- Season with salt and pepper, to taste.
