Carrot Soup

When I make this recipe, I double it, it's so good. The rice makes it a creamy soup.

Ingredients

  1. 1 medium onion, sliced 
  2. 1 clove garlic 
  3. 5 cups (1.2 L) water 
  4. 2 1/2 cups (625 mL) carrots, sliced 
  5. 1/4 cup (65 mL) rice, uncooked 
  6. 2 tbsp (30 mL) chicken broth 
  7. Salt and pepper, to taste

Steps

  1. Brown the onions and garlic in a saucepan with a bit of oil.
  2. Add the water, carrots, rice and broth and bring to a boil.
  3. Cover and let simmer for 20 to 25 minutes.
  4. Process in a blender.
  5. Season with salt and pepper, to taste.
