Carrot, Pineapple and Ginger Soup

Ingredients

  1. 1 medium onion, minced 
  2. 1 tablespoon olive or canola oil 
  3. 1-3 tablespoons of grated fresh ginger 
  4. 2 garlic cloves, minced 
  5. 4-5 carrots, medium size 
  6. 3 cups chicken or vegetable broth 
  7. 1/4 cups fresh pineapple 
  8. salt and pepper to taste 
  9. cream or milk to taste(optional)

Steps

  1. Cook onions in oil until tender.
  2. Add ginger and garlic and cook for 2-3 minutes.
  3. Add carrots and chicken (or vegetable) broth and cook until carrots are tender.
  4. Add pineapple and milk or cream (optional). Puree in blender until smooth and enjoy!
