Ingredients
- 1 medium onion, minced
- 1 tablespoon olive or canola oil
- 1-3 tablespoons of grated fresh ginger
- 2 garlic cloves, minced
- 4-5 carrots, medium size
- 3 cups chicken or vegetable broth
- 1/4 cups fresh pineapple
- salt and pepper to taste
- cream or milk to taste(optional)
Steps
- Cook onions in oil until tender.
- Add ginger and garlic and cook for 2-3 minutes.
- Add carrots and chicken (or vegetable) broth and cook until carrots are tender.
- Add pineapple and milk or cream (optional). Puree in blender until smooth and enjoy!
