Capelli d'Angelo with Creamy Tomato, Coriander and Prosciutto Sauce

Capelli d'Angelo is a very fine, "angel hair" pasta.

Ingredients

  1. 375 g Capelli d'Angelo 
  2. 150 g finely sliced prosciutto 
  3. 3 tomatoes, diced 
  4. 1 onion, minced 
  5. 2 garlic cloves, minced 
  6. 3/4 cup fresh coriander, chopped 
  7. 1 lemon, cut in quarters 
  8. 300 ml of 35% cream 
  9. 100 mL white wine 
  10. 3 tbsp parmesan 
  11. 2 tbsp extra-virgin olive oil 
  12. Salt, pepper

Steps

  1. Heat the oil in a pan and brown the onions, garlic and coriander for 2-3 minutes.
  2. Add the proscuitto and cook for another 5 minutes.
  3. Add the tomatoes, cream, wine, parmesan, salt and pepper. Cook over medium-low heat for about 15 minutes and stir occasionally.
  4. Boil the pasta while the sauce is cooking.
  5. Mix pasta and sauce together.
  6. Serve with a bit of lemon juice squeezed on it.
