Capelli d'Angelo with Creamy Tomato, Coriander and Prosciutto Sauce

Ingredients
- 375 g Capelli d'Angelo
- 150 g finely sliced prosciutto
- 3 tomatoes, diced
- 1 onion, minced
- 2 garlic cloves, minced
- 3/4 cup fresh coriander, chopped
- 1 lemon, cut in quarters
- 300 ml of 35% cream
- 100 mL white wine
- 3 tbsp parmesan
- 2 tbsp extra-virgin olive oil
- Salt, pepper
Steps
- Heat the oil in a pan and brown the onions, garlic and coriander for 2-3 minutes.
- Add the proscuitto and cook for another 5 minutes.
- Add the tomatoes, cream, wine, parmesan, salt and pepper. Cook over medium-low heat for about 15 minutes and stir occasionally.
- Boil the pasta while the sauce is cooking.

Mix pasta and sauce together.
- Serve with a bit of lemon juice squeezed on it.
