Canadian Cream of Vegetable Soup

Ingredients

  1. 2 tbsp (30 g) butter 
  2. 1/2 cup (125 mL) carrot, diced 
  3. 1/2 cup (125 mL) turnip, diced 
  4. 1/2 cup (125 mL) celery, diced 
  5. 1/4 cup (60 mL) potato, diced 
  6. 1/2 cup (125 mL) onion, chopped 
  7. 1/2 cup (125 mL) leek, chopped 
  8. 1 cup (250 mL) fresh tomato, diced 
  9. 3 cups (750 mL) beef broth (1 can of beef consommé with added water) 
  10. Salt and pepper, to taste 
  11. 1/2 cup (125 mL) cream (15 % table or whipping cream)

Steps

  1. Sweat the vegetables and tomatoes in butter for 5 minutes.
  2. Add the broth, then the salt and pepper. Bring to a boil and let simmer for 30 minutes on low heat.
  3. Pour into a blender. Add the cream.
