Ingredients
- 2 tbsp (30 g) butter
- 1/2 cup (125 mL) carrot, diced
- 1/2 cup (125 mL) turnip, diced
- 1/2 cup (125 mL) celery, diced
- 1/4 cup (60 mL) potato, diced
- 1/2 cup (125 mL) onion, chopped
- 1/2 cup (125 mL) leek, chopped
- 1 cup (250 mL) fresh tomato, diced
- 3 cups (750 mL) beef broth (1 can of beef consommé with added water)
- Salt and pepper, to taste
- 1/2 cup (125 mL) cream (15 % table or whipping cream)
Steps
- Sweat the vegetables and tomatoes in butter for 5 minutes.
- Add the broth, then the salt and pepper. Bring to a boil and let simmer for 30 minutes on low heat.
- Pour into a blender. Add the cream.
