Californian Salad with Mandarins

Ingredients

  1. Salad: 
  2. 3/8 lb (200 g) chicken, cooked and cut into thin strips 
  3. 1/8 lb (60 g) mandarins, chopped 
  4. 1/8 lb (60 g) mozzarella cheese, grated 
  5. 1/2 lb (240 g) English cucumber, diced 
  6. 1/4 lb (120 g) celery, diced 
  7. 16 mandarin sections 
  8. 12 red pepper strips

  11. Dressing: 
  12. 1 to 2 mandarins, quartered 
  13. 1 kiwi 
  14. 1 3/8 cup (350 mL) mayonnaise 
  15. Pepper, optional

Steps

  1. Place all the dressing ingredients in a food processor and mix until uniform in texture.
  2. In a large bowl, place the chicken, chopped mandarins, mozzarella, cucumbers and celery and pour in the dressing. Stir.
  3. Serve on a bed of romaine lettuce or mesclun salad and dress with a few mandarin sections and red pepper strips.
