Californian Mandarin Salad

Ingredients

  1. Salad: 
  2. 200 g (3/8 lbs) cooked chicken, cut in thin strips  
  3. 60 g (1/8 lbs) mandarins, chopped  
  4. 60 g (1/8 lbs) mozzarella, grated  
  5. 240 g (1/2 lbs) English cucumber, diced  
  6. 120 g (1/4 lbs) celery, diced  
  7. 16 mandarin quarters 
  8. 12 strips red pepper  
  9.  
  10. Vinaigrette: 
  11. 1 to 2 mandarin quarters  
  12. 1 kiwi  
  13. 1 3/8 cup (350 mL) mayonnaise  
  14. Pepper (optional)

Steps

  1. Place all of the vinaigrette ingredients in a food processor and blend until the mixture is a uniform consistency.
  2. Put the chicken, chopped mandarins, mozzarella, cucumber and celery in a large bowl and add the vinaigrette and mix.
  3. Serve on a bed of romaine lettuce and/or mesclun decorated with mandarin quarters and red pepper strips.
