Ingredients
- Salad:
- 200 g (3/8 lbs) cooked chicken, cut in thin strips
- 60 g (1/8 lbs) mandarins, chopped
- 60 g (1/8 lbs) mozzarella, grated
- 240 g (1/2 lbs) English cucumber, diced
- 120 g (1/4 lbs) celery, diced
- 16 mandarin quarters
- 12 strips red pepper
- Vinaigrette:
- 1 to 2 mandarin quarters
- 1 kiwi
- 1 3/8 cup (350 mL) mayonnaise
- Pepper (optional)
Steps
- Place all of the vinaigrette ingredients in a food processor and blend until the mixture is a uniform consistency.
- Put the chicken, chopped mandarins, mozzarella, cucumber and celery in a large bowl and add the vinaigrette and mix.
- Serve on a bed of romaine lettuce and/or mesclun decorated with mandarin quarters and red pepper strips.
