Ingredients
- 3 cups (750 mL; 24 oz) cabbage, coarsely chopped
- 1/2 cup (125 mL) carrots, grated
- 2 tbsp (30 mL) butter
- 1/2 cup (125 mL) leeks, chopped
- 10 cups (2.5 L) beef broth
- 1 tbsp (15 mL) salted herbs
- 1 tbsp (15 mL) fresh parsley, chopped
- Salt and pepper
Steps
- In a saucepan, brown the cabbage, carrots and leeks in the butter for 15 minutes, stirring regularly.
- Add the beef broth, herbs and parsley.
- Bring to a boil and season.
- Let simmer partially covered for 1 hour.
