Cabbage Soup

Ingredients

  1. 3 cups (750 mL; 24 oz) cabbage, coarsely chopped 
  2. 1/2 cup (125 mL) carrots, grated 
  3. 2 tbsp (30 mL) butter 
  4. 1/2 cup (125 mL) leeks, chopped 
  5. 10 cups (2.5 L) beef broth 
  6. 1 tbsp (15 mL) salted herbs 
  7. 1 tbsp (15 mL) fresh parsley, chopped 
  8. Salt and pepper

Steps

  1. In a saucepan, brown the cabbage, carrots and leeks in the butter for 15 minutes, stirring regularly.
  2. Add the beef broth, herbs and parsley.
  3. Bring to a boil and season.
  4. Let simmer partially covered for 1 hour.
