Broiled Tilapia with Roasted Red Pepper Sauce

Broiling is a low-fat, ultra-quick method of preparing fish. You can replace the tilapia with halibut, catfish or sole, if you like. Serve with lemon wedges.

Ingredients

  1. 1 lb (500 g) tilapia fillets 
  2. 1/4 tsp (1 mL) each salt and pepper 
  3. 3/4 cup (175 mL) finely chopped roasted red peppers 
  4. 2 tbsp (25 mL) light sour cream 
  5. 1 tbsp (15 mL) light mayonnaise 
  6. 2 tsp (10 mL) lemon juice 
  7. 2 tbsp (25 mL) finely chopped fresh chives or green onions

Steps

  1. Place fish on greased broiler pan; sprinkle with half each of the salt and pepper. Broil until fish flakes easily when tested, about 6 minutes.
  2. Meanwhile, in small bowl, mix together red peppers, sour cream, mayonnaise, lemon juice and remaining salt and pepper; serve over fish. Sprinkle with chives.
  3. Tip: When there's no time to roast red peppers, use bottled roasted peppers.
