Broiling is a low-fat, ultra-quick method of preparing fish. You can replace the tilapia with halibut, catfish or sole, if you like. Serve with lemon wedges.
Ingredients
- 1 lb (500 g) tilapia fillets
- 1/4 tsp (1 mL) each salt and pepper
- 3/4 cup (175 mL) finely chopped roasted red peppers
- 2 tbsp (25 mL) light sour cream
- 1 tbsp (15 mL) light mayonnaise
- 2 tsp (10 mL) lemon juice
- 2 tbsp (25 mL) finely chopped fresh chives or green onions
Steps
- Place fish on greased broiler pan; sprinkle with half each of the salt and pepper. Broil until fish flakes easily when tested, about 6 minutes.
- Meanwhile, in small bowl, mix together red peppers, sour cream, mayonnaise, lemon juice and remaining salt and pepper; serve over fish. Sprinkle with chives.
- Tip: When there's no time to roast red peppers, use bottled roasted peppers.
