Blueberry Muffins

Ingredients

  1. 1 cup (115 g) oat flour 
  2. 1-1/4 cup (140 g) whole wheat flour 
  3. 3/4 cup (150 g) brown sugar 
  4. 1 cup (250 mL) buttermilk or sour milk 
  5. 1 cup (250 mL) blueberries, fresh or frozen 
  6. 1/4 cup (65 mL) melted margarine 
  7. 1 egg, beaten 
  8. 1 tsp (5 g) baking powder 
  9. 1/2 tsp (2 g) baking soda 
  10. 1/4 tsp (1 g) salt

Steps

  1. In a bowl, combine the oat flour and sour milk. Let stand.
  2. In a separate bowl, combine the whole wheat flour, brown sugar, baking powder, baking soda and salt. Add the egg and margarine, as well as the first mixture.
  3. Stir until moist and add the blueberries.
  4. Pour into muffin cups and bake at 300 F (150 C) for 22 minutes.
