Ingredients
- 1 cup (115 g) oat flour
- 1-1/4 cup (140 g) whole wheat flour
- 3/4 cup (150 g) brown sugar
- 1 cup (250 mL) buttermilk or sour milk
- 1 cup (250 mL) blueberries, fresh or frozen
- 1/4 cup (65 mL) melted margarine
- 1 egg, beaten
- 1 tsp (5 g) baking powder
- 1/2 tsp (2 g) baking soda
- 1/4 tsp (1 g) salt
Steps
- In a bowl, combine the oat flour and sour milk. Let stand.
- In a separate bowl, combine the whole wheat flour, brown sugar, baking powder, baking soda and salt. Add the egg and margarine, as well as the first mixture.
- Stir until moist and add the blueberries.
- Pour into muffin cups and bake at 300 F (150 C) for 22 minutes.
