Ingredients

  1. 2-1/4 cup (285 g) flour 
  2. 3/4 cup (170 g) sugar 
  3. 1 tbsp (10 g) baking powder 
  4. 1/2 tsp (3 g) baking soda 
  5. 1 pinch (2 g) salt 
  6. 1/2 tsp (2 g) nutmeg 
  7. 2 eggs 
  8. 1 cup (250 mL) plain yogurt 
  9. 1 tbsp (15 g) lemon zest 
  10. 1/4 cup (65 mL) orange juice 
  11. 1/4 cup (65 mL) vegetable oil 
  12. 1-1/2 cup (22g) fresh blueberries

Steps

  1. Preheat the oven to 375 F (190 C).
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and nutmeg.
  3. In a separate bowl, combine the eggs, yogurt, lemon zest, orange juice and oil.
  4. Pour the liquid ingredients over the dry ingredients.
  5. Add the blueberries and mix until the batter is moist, no more.
  6. Divide the batter into 12 muffin cups.
  7. Bake for 25 minutes or until a toothpick inserted into the centre comes out clean.
