Ingredients
- 2-1/4 cup (285 g) flour
- 3/4 cup (170 g) sugar
- 1 tbsp (10 g) baking powder
- 1/2 tsp (3 g) baking soda
- 1 pinch (2 g) salt
- 1/2 tsp (2 g) nutmeg
- 2 eggs
- 1 cup (250 mL) plain yogurt
- 1 tbsp (15 g) lemon zest
- 1/4 cup (65 mL) orange juice
- 1/4 cup (65 mL) vegetable oil
- 1-1/2 cup (22g) fresh blueberries
Steps
- Preheat the oven to 375 F (190 C).
- In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and nutmeg.
- In a separate bowl, combine the eggs, yogurt, lemon zest, orange juice and oil.
- Pour the liquid ingredients over the dry ingredients.
- Add the blueberries and mix until the batter is moist, no more.
- Divide the batter into 12 muffin cups.
- Bake for 25 minutes or until a toothpick inserted into the centre comes out clean.
