Black Bean Sausage Soup

Ingredients

  1. 2 smoked sausages (4 oz/125 g), diced 
  2. 1 onion, finely chopped 
  3. 2 tsp (10 mL) ground cumin 
  4. 2 tbsp (25 mL) tomato paste 
  5. 1 can (19 oz/540 mL) black beans, drained and rinsed

Steps

  1. In large saucepan, brown sausages over medium heat, about 5 minutes. Add onion and cumin; cook, stirring occasionally, until softened, 2 minutes.
  2. Add tomato paste; cook, stirring, for 1 minute. Add beans and 4 cups (1 L) water; bring to boil. Reduce heat, cover and simmer for 15 minutes.
