Bison Potato Pizza

Sinclair River Bison Ranch is located on the eastern edge of the scenic Swan River Valley, not far from the town of Minitonas in beautiful Manitoba, Canada. Home to a herd of over 250 Free Range Buffalo, the ranch prides itself on running a natural herd, free from growth enhancing hormones and antibiotics.

Ingredients

  1. 1 pound ground bison  
  2. 1/2 medium onion  
  3. 1/2 green pepper, diced  
  4. 1-1/2 tsp salt, divided  
  5. 1/2 tsp pepper  
  6. 2 tbsp. margarine, melted 
  7. 6 medium potatoes, peeled and shredded 
  8. 3 eggs, beaten 
  9. 1 cup evaporated milk or Half and Half cream  
  10. 2 cups shredded cheddar or mozzarella cheese

Steps

  1. Brown meat. Add onion, green pepper, 1/2 teaspoon salt and pepper. Keep warm.
  2. Combine potatoes, margarine and remaining salt. Press into the bottom of an 8 x 13 inch pan. Bake at 400 degrees for 5 minutes. Remove from oven and top with bison meat mixture.
  3. Mix together eggs and milk; pour over all. Return to oven and bake covered at 325 degrees until potatoes are tender, about 30 minutes.
  4. Top with cheese and return to the oven (keep covered) until cheese is melted.
