Sinclair River Bison Ranch is located on the eastern edge of the scenic Swan River Valley, not far from the town of Minitonas in beautiful Manitoba, Canada. Home to a herd of over 250 Free Range Buffalo, the ranch prides itself on running a natural herd, free from growth enhancing hormones and antibiotics.
Ingredients
- 1 pound ground bison
- 1/2 medium onion
- 1/2 green pepper, diced
- 1-1/2 tsp salt, divided
- 1/2 tsp pepper
- 2 tbsp. margarine, melted
- 6 medium potatoes, peeled and shredded
- 3 eggs, beaten
- 1 cup evaporated milk or Half and Half cream
- 2 cups shredded cheddar or mozzarella cheese
Steps
- Brown meat. Add onion, green pepper, 1/2 teaspoon salt and pepper. Keep warm.
- Combine potatoes, margarine and remaining salt. Press into the bottom of an 8 x 13 inch pan. Bake at 400 degrees for 5 minutes. Remove from oven and top with bison meat mixture.
- Mix together eggs and milk; pour over all. Return to oven and bake covered at 325 degrees until potatoes are tender, about 30 minutes.
- Top with cheese and return to the oven (keep covered) until cheese is melted.
