Bison Lasagna

Sinclair River Bison Ranch is located on the eastern edge of the scenic Swan River Valley, not far from the town of Minitonas in beautiful Manitoba, Canada. Home to a herd of over 250 Free Range Buffalo, the ranch prides itself on running a natural herd, free from growth enhancing hormones and antibiotics.

Ingredients

  1. 1 pound ground bison 
  2. 1 small onion, chopped 
  3. 3 garlic cloves, minced 
  4. 1 can (398 ml) tomato sauce 
  5. 1 can (156 ml) tomato paste 
  6. 1 cup water 
  7. 1 cup salsa 
  8. 2 tsp sugar 
  9. 1-2 tsp chili powder 
  10. 2 tsp Italian seasoning 
  11. 13 lasagna noodles 
  12. 1 carton (500 g) creamed cottage cheese 
  13. 4 cups shredded mozzarella cheese

Steps

  1. Brown meat in a large skillet. Add onions and garlic and cook until soft. Stir in next 7 ingredients. Simmer, uncovered for 1 hour, stirring occasionally.
  2. Meanwhile, cook lasagna noodles according to package directions; drain and rinse in cold water.
  3. In a 9 x 13 pan, spread a thin layer of meat sauce, a layer of noodles, a layer of meat sauce, half of the cottage cheese, mozzarella cheese, another layer of noodles, meat sauce, the remaining cottage cheese, mozzarella cheese and a final layer of noodles, meat sauce and mozzarella cheese.
