Ingredients
- 1 tbsp canola oil
- 1 cup chopped onion
- 1 green pepper, diced
- 1/2 cup celery
- 2 lb ground bison
- 2 garlic cloves, minced
- 1 can (28 oz.) diced plum tomatoes
- 1 can (14 oz.) tomato sauce
- 1 can (5 ½ oz.) tomato paste
- 3 tbsp chili powder
- 1 bay leaf
- 1 tsp dry oregano
- 1 tsp dry basil
- 1/2 tsp ground cumin
Steps
- Put oil in large saucepan. Add onion, green pepper and celery and sauté over medium heat until onion begins to soften.
- Add bison. Stir and cook until meat is browned.
- Stir in garlic, sauces and spices. Bring to a boil.
- Reduce heat and simmer for 30 minutes. Remove bay leaf and serve.
