Beef with Spanish Rice

Simple and delicious; even better the next day!

Ingredients

  1. 1-1/2 tbsp (22 mL) oil  
  2. 1 lb (450 g) ground beef  
  3. 1 green pepper, chopped  
  4. 1 onion, chopped  
  5. 1 clove garlic, chopped  
  6. 1-1/2 cup (310 g) long grain rice, uncooked  
  7. 1 can (10 oz; 284 mL) sliced mushrooms (reserve the juice and add 2 cups (500 mL) water) 
  8. 2 tsp (10 g) chili powder  
  9. Pinch salt  
  10. Pepper to taste  
  11. 14 oz (540 mL) canned tomatoes, diced  
  12. 3/4 cup (175 g) frozen peas

Steps

  1. Preheat the oven to 350 F (180 C).
  2. In a Dutch oven, heat the oil and cook the beef. Add the green pepper, the onion and the garlic and cook for 3 minutes.
  3. Add the rice, the chili powder, salt, pepper, the mushrooms, the tomatoes and the mushroom juice with water.
  4. Cook in oven for 35 to 40 minutes.
  5. Five minutes before the end of cooking, add the frozen peas.
