Simple and delicious; even better the next day!
Ingredients
- 1-1/2 tbsp (22 mL) oil
- 1 lb (450 g) ground beef
- 1 green pepper, chopped
- 1 onion, chopped
- 1 clove garlic, chopped
- 1-1/2 cup (310 g) long grain rice, uncooked
- 1 can (10 oz; 284 mL) sliced mushrooms (reserve the juice and add 2 cups (500 mL) water)
- 2 tsp (10 g) chili powder
- Pinch salt
- Pepper to taste
- 14 oz (540 mL) canned tomatoes, diced
- 3/4 cup (175 g) frozen peas
Steps
- Preheat the oven to 350 F (180 C).
- In a Dutch oven, heat the oil and cook the beef. Add the green pepper, the onion and the garlic and cook for 3 minutes.
- Add the rice, the chili powder, salt, pepper, the mushrooms, the tomatoes and the mushroom juice with water.
- Cook in oven for 35 to 40 minutes.
- Five minutes before the end of cooking, add the frozen peas.
