Bean Salad

Ingredients

  1. 1 can (540 mL) chickpeas 
  2. 1 can (540 mL) red kidney beans 
  3. 1 can (540 mL) mixed beans 
  4. Olive oil, to taste 
  5. 5 cloves garlic, chopped 
  6. 1 small onion, diced 
  7. 2 tsp (10 mL) lemon juice 
  8. 2 green onions, chopped 
  9. 1/2 red pepper, quartered 
  10. 1/2 green pepper, quartered 
  11. Salt, pepper, parsley, basil and oregano, to taste

Steps

  1. Rinse and drain all the beans.
  2. In a bowl, combine all the other ingredients. Add the beans.
  3. Refrigerate for one day before serving.

    this salad rocks. It is so yummy and not overpowering with a viniger taste.
