Ingredients
- 2 portion size fillets of your favourite fish (e.g., halibut, salmon, pickerel, etc.)
- 2 squares (large enough to wrap each fish fillet) of banana leaves or aluminum foil (if banana leaves are not available)
- 1 tbsp olive oil
- 1 tbsp chopped mixture of herbs such as cilantro, green onions, basil
- salt and pepper to taste
Steps
- In a small bowl, mix all of the ingredients except the fish to create a marinade. Marinate the fish all over on both sides with the marinade and set aside for about 10 minutes.
- Place the fish on the banana leaf or aluminum foil and wrap like a package.
- Place on a medium hot grill and barbecue for about 10-15 minutes until done. Test for doneness by gently opening the packet -- then serve. Very healthy dish!
