Ingredients

  1. 2 portion size fillets of your favourite fish (e.g., halibut, salmon, pickerel, etc.) 
  2. 2 squares (large enough to wrap each fish fillet) of banana leaves or aluminum foil (if banana leaves are not available) 
  3. 1 tbsp olive oil 
  4. 1 tbsp chopped mixture of herbs such as cilantro, green onions, basil 
  5. salt and pepper to taste 

Steps

  1. In a small bowl, mix all of the ingredients except the fish to create a marinade. Marinate the fish all over on both sides with the marinade and set aside for about 10 minutes.
  2. Place the fish on the banana leaf or aluminum foil and wrap like a package. 
  3. Place on a medium hot grill and barbecue for about 10-15 minutes until done. Test for doneness by gently opening the packet -- then serve.  Very healthy dish!
