Ingredients

  1. 1 dozen eggs
  2. 12 pimento-stuffed olives
  3. 1 packet (28 g) plain gelatin
  4. 2 tsp (10 mL) green food colouring
  5. Tube of red jelly to decorate cakes, or a strawberry glaze icing

Steps

  1. Cook eggs until hard-boiled, about 15 minutes.
  2. Run cold water over the eggs to cool them down. Remove the shells.
  3. Cut the eggs in half lengthwise and place them in a deep dish. Place a pimento-stuffed olive on each egg.
  4. Prepare the gelatin according to package directions.
  5. Pour the liquid gelatin into a saucepan and reheat.
  6. Add the green food colouring. Mix gently for 1 minute.
  7. Remove from the heat and let cool for 3 to 4 minutes, until the mixture is no longer boiling hot.
  8. Pour the green gelatin over the eggs and let cool.
  9. Before the gelatin completely solidifies, draw some red veins on the eggs and gelatin with the tube of red jelly.
  10. Place the eggs in the refrigerator until serving time.
