Basmati Red Onion Pilaf

Basmati rice, a long-grain rice with a wonderfully toasty, nutty flavour, is available in health food stores, Indian markets and some supermarkets.

Ingredients

  1. 1 tbsp (15 mL) Butter 
  2. 1 Small red onion, cut in thin wedges 
  3. 1/2 cup (125 mL) Basmati or parboiled rice 
  4. 1 Bay leaf 
  5. 1/2 tsp (2 mL) Chopped fresh thyme (or pinch dried) 
  6. 1/4 tsp (1 mL) Salt 
  7. Pinch Pepper 
  8. 1 cup (250 mL) Chicken stock 
  9. 1/4 cup (50 mL) Toasted halved cashews 
  10. Fresh thyme sprigs (optional)

Steps

  1. In heavy saucepan, heat butter over medium heat; cook onion for 3 minutes or until softened. Stir in rice, bay leaf, thyme, salt and pepper; cook, stirring, for 1 minute.
  2. Pour in stock; bring to boil. Cover and reduce heat to low; simmer for about 20 minutes or until rice is tender and liquid absorbed. Discard bay leaf. Sprinkle with cashews; garnish with thyme sprigs (if using).
