Basil Tomato Gratin

There's nothing better as a side dish for roasted meat, lamb or chicken.

Ingredients

  1. 3/8 cup (85 g) butter  
  2. 2 large onions, cut in rings and separated  
  3. 10 large tomatoes, cut in thin slices  
  4. 2 tbsp (8 g) chopped fresh basil or 2 tsp (3 g) dried basil 
  5. 6 turns of a pepper mill 
  6. 1 tsp (5 g) salt  
  7. 1 tsp (5 g) sugar  
  8. 1 cup (about 85 g) bread crumbs

Steps

  1. Preheat oven to 400 F (200 C).
  2. Grease a pyrex gratin dish with 1 tbsp (15 g) butter.
  3. Melt 2 tbsp (30 g) butter in a saucepan and cook the onions for 10 minutes until softened, but not golden.
  4. In the gratin dish, arrange a layer of onions. Sprinkle with basil.
  5. Cover with a layer of tomato slices and sprinkle with pepper, salt and sugar.
  6. Sprinkle with bits of butter.
  7. Repeat the layers until all of the ingredients are used.
  8. Finish with the bread crumbs and bits of butter.
  9. Cook in 400 F (200 C) oven for 30 minutes. Serve hot.
