Barbecued Wild Salmon

Ingredients

  1. 1/2 wild salmon, fileted with skin on 
  2. 1/4 cup maple syrup 
  3. 2-3 tbsp honey mustard or sweet mustard

Steps

  1. Mix the syrup and mustard in a small dish. Brush 1/2 the mixture over the skin of the salmon.
  2. Lay salmon skin down on a double layer of foil. Brush the flesh side of the salmon with the remaining mixture.
  3. Fold the foil over and seal tightly on the ends to make a pouch. Place foil pouch on a hot BBQ grill.
  4. Cook 10 minutes then turn over and cook 10 minutes on the other side.
  5. Remove foil pouch to a platter and let stand for 5 minutes. Carefully remove the foil and serve.
