Ingredients
- 1 small eggplant
- juice of 1/2 lemon
- 1 tbsp. olive oil
- salt and pepper
Steps
- Mix lemon juice, oil and salt and pepper together.
- Slice the eggplant into 1 cm. thick slices.
- Coat the eggplant slices all over with the marinade. Leave for 10 minutes.
- Grill on medium high for about 3 minutes each side or until done.
