Ingredients

  1. 1 small eggplant  
  2. juice of 1/2 lemon 
  3. 1 tbsp. olive oil 
  4. salt and pepper 

Steps

  1. Mix lemon juice, oil and salt and pepper together.
  2. Slice the eggplant into 1 cm. thick slices.
  3. Coat the eggplant slices all over with the marinade. Leave for 10 minutes.
  4. Grill on medium high for about 3 minutes each side or until done.
