Barbecue Poached Sole Fillets

Ingredients

  1. 4 sole fillets 
  2. 1/2 tsp (2 ml) salt 
  3. 1 tsp (5 ml) parsley, dried 
  4. 1 tsp (5 ml) pepper 
  5. 1/2 tsp (2 mL) garlic salt 
  6. 1 onion, chopped 
  7. 4 tbsp (60 ml) butter

Steps

  1. Mix all the ingredients together and coat sole fillets with the mixture.
  2. Individually wrap each fillet of sole in aluminum foil.
  3. Barbecue on the grill over medium heat for about 20 minutes.
  4. Serve with rice pilaf and a Caesar salad.
